I’m updating this recipe from the one I contributed to the Third Annual Good Cookie’s Food Blogger Valentine’s Event. The recipe and the event were good before, but a few tweaks, a little creativity with the spices, and some added chilling time, and now I think they’re great – and just the little bite of butter and spice you want to kick off your holiday cookie-baking season!
Snickerdoodles are always a family favorite. And when I started feeling the holiday bug and set up the tree and started playing all the Christmas music and lit candles all over the mantel {because we’re in Florida, and it’s still too hot to fire up the fireplace}, Scott asked if I’d kick off my holiday cookie baking early.
I decided it was prime time to update one of his holiday favorites – our brown sugar snickerdoodles. Instead of smashing these like we usually do, I chilled and then rolled them in spiced sugar and left them on the tray in balls. This made for an extremely fluffy and nicely spiced cookie that my whole family loves.
Here’s what you’ll need to make these goodies:
- 1 cup salted butter at room temperature
- 2 eggs
- 3/4 cup light brown sugar
- 3/4 cup sugar
- 2 1/2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/4 tsp ground allspice
Sift together the flour, baking powder, and baking soda in a large bowl. Set that aside for a moment.
In a large bowl using a wooden spoon or your stand mixer, beat the room temperature butter until it’s nice and creamy and fluffy. Beat in the brown sugar and all but about 3 tbsp of the sugar, and then beat in the egg until they’re all combined with the butter and it’s fluffy again.
Add the dry ingredients gradually until just incorporated. Don’t overmix – your dough will be dense!
Cover the dough with plastic wrap and stick in the fridge for an hour.
Preheat your oven for 375F and line a baking sheet with parchment paper. Meanwhile, whisk together the remaining 3 tbsp of sugar and all the spices until you have a nicely blended mix.
Scoop up about 2 tbsp of the dough and roll into a ball, then roll through the spiced sugar until thoroughly coated. Transfer the ball to the sheet pan. Repeat until you’ve used all the dough.
Bake the cookies 12-14 minutes or until the edges are golden. Let cool at least 3-5 minutes before serving. Enjoy!

Brown Sugar Snickerdoodles
Ingredients

- Beat the brown sugar, all but 3 tbsp of the sugar, and the egg into the butter until thoroughly combined.
- Beat in the dry ingredients into the wet ingredients until just incorporated. Don't overmix or your dough will be dense.
- Cover the dough with plastic wrap and refrigerate about an hour.
- Preheat your oven to 375F and line a baking sheet with parchment paper.
- In a small bowl, whisk together the remaining 3 tbsp of sugar and the cinnamon, ginger, cardamom, and allspice together until you have a nice spiced sugar.
- Using a spoon or a cookie scoop, scoop up about 2 tbsp of the dough and roll in your hands until you have a ball. Roll through the bowl of spiced sugar until thoroughly coated, and then transfer the ball to the sheet pan. Repeat until you have used all the dough.
- Bake the cookies 12-14 minutes or until the dough is cooked through and the edges are golden. Remove from the oven and let cool at least 3-5 minutes before serving.
- Serve and enjoy!
