In a large bowl, sift together the flour, baking powder, and baking soda. Set aside for now.
In a large bowl using a wooden spoon or in your stand mixer, beat the room temperature butter until it's creamy and fluffy.
Beat the brown sugar, all but 3 tbsp of the sugar, and the egg into the butter until thoroughly combined.
Beat in the dry ingredients into the wet ingredients until just incorporated. Don't overmix or your dough will be dense.
Cover the dough with plastic wrap and refrigerate about an hour.
Preheat your oven to 375F and line a baking sheet with parchment paper.
In a small bowl, whisk together the remaining 3 tbsp of sugar and the cinnamon, ginger, cardamom, and allspice together until you have a nice spiced sugar.
Using a spoon or a cookie scoop, scoop up about 2 tbsp of the dough and roll in your hands until you have a ball. Roll through the bowl of spiced sugar until thoroughly coated, and then transfer the ball to the sheet pan. Repeat until you have used all the dough.
Bake the cookies 12-14 minutes or until the dough is cooked through and the edges are golden. Remove from the oven and let cool at least 3-5 minutes before serving.
