Brown Sugar Snickerdoodles

Ingredients
  

  • 1 cup salted butter room temperature
  • 2 eggs
  • 3/4 cup light brown sugar
  • 3/4 cup sugar
  • 2 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground allspice

Instructions
 

  • In a large bowl, sift together the flour, baking powder, and baking soda. Set aside for now.
  • In a large bowl using a wooden spoon or in your stand mixer, beat the room temperature butter until it's creamy and fluffy.
  • Beat the brown sugar, all but 3 tbsp of the sugar, and the egg into the butter until thoroughly combined.
  • Beat in the dry ingredients into the wet ingredients until just incorporated. Don't overmix or your dough will be dense.
  • Cover the dough with plastic wrap and refrigerate about an hour.
  • Preheat your oven to 375F and line a baking sheet with parchment paper.
  • In a small bowl, whisk together the remaining 3 tbsp of sugar and the cinnamon, ginger, cardamom, and allspice together until you have a nice spiced sugar.
  • Using a spoon or a cookie scoop, scoop up about 2 tbsp of the dough and roll in your hands until you have a ball. Roll through the bowl of spiced sugar until thoroughly coated, and then transfer the ball to the sheet pan. Repeat until you have used all the dough.
  • Bake the cookies 12-14 minutes or until the dough is cooked through and the edges are golden. Remove from the oven and let cool at least 3-5 minutes before serving.
