Baking up delicious treats in the kitchen is about more than just making comfort food. It’s about making comfort, period. Baking actually provides therapeutic value to improve your mood.
Measuring butter and sugar, beating batter, sifting flour…it focuses your attention and helps you tune out the rest of the world, like meditation. It stretches your creativity. And the best part, it makes us happy to provide nourishment to others. If you’re just nourishing yourself, that’s just fine, too. I think in all this craziness, you owe it to yourself to give yourself the gift of good food.
So therefore, if you need a pick me up, you should head to the kitchen and go ahead and whip up some brownies. It’s science. There have been studies.
As you all can tell, I’ve been doing quite a bit of baking since quarantine hit and busy days at the office and traveling have become busy days of working at home, cleaning the home, fixing the home, and chasing the toddler around the home. I’m on week…let me see now…six {I think? what day is it?} of working at home and I think it’s only the fourth time I’ve stress organized the pantry. So I’m doing okay!
But there are still some times when I need to get up early, take a deep breath, and pull out all the bowls and spoons and the flour and sugar and butter and bake us something delicious. Sometimes, I just need to prove to the world that there will be at least one part of my life I have control over, and sometimes the only part of life I can master is the flour and sugar and butter.
This is a good recipe for the early hours of the morning. For one thing, I like throwing black coffee into my chocolate baked goods {it really pulls out the flavor of the chocolate and keeps it moist} and it’s easy to do when you have a fresh pot brewed. And for another, your family is considerably happier and easier to deal with when they awaken to the smell of fresh brownies in the oven.
The hard part is keeping them from going face first into the brownies instead of their breakfasts. Actually, the hard part is not going face first into the batter myself. It’s awkward when you greet your family in the morning and you have a chocolate smear on your chin.

Line a 9×9 (for thick brownies) or 9×13 (for smaller brownies) baking pan with parchment paper and butter and flour the edges lightly.;Fit together a sauce pan and a Pyrex bowl to make a double boiler. The bowl should fit on top of the sauce pan but not dip too low. Fill the sauce pan about 1/3 way full with water and set on the stove to boil. When it starts to boil, put the bowl on top and place the butter and baking chocolate in the bowl. Whisk together until the butter and chocolate are melted and smooth.;Stir in the sugar, vanilla, and coffee.;In a small bowl, whisk the eggs until they are slightly frothy. Stir into the chocolate mix along with the flour, cocoa powder, and baking powder.;Pour the mixture into the baking pan. Bake at 350F for 25-30 minutes, or until the brownies are nice and crinkly on top and just set. They will continue to cook as they cool.;Let cool slightly and dust the tops with powdered sugar.;Serve and enjoy![/lt_recipe]

Both fudge and brownies are very tasty. I remember back in the days when we traveled to the Monterey Bay Aquarium, there was a place nearby where you can buy fudge. I remember enjoying eating those. The last time I’ve been there was 2007 and it was a delightful experience.
There are so many good chocolate shops near there – Ghiradelli, Rocky Mountain, Carousel Candies – I wish I could remember where we went to get the fudge!
