What to Make With Spring’s Favorite Fruit

There’s nothing that says spring quite like fresh strawberries! It’s always exciting to see them start showing up in the grocery and at the farmer’s market. Here are some of our favorite things to use them in!

Despite the few random cold snaps we’ve had this month, spring is very definitely in the air! Everything is blooming everywhere {much to the chagrin of my poor husband and his allergies} and the weather has settled into the comfortable sunny warmth that is perfect for sipping either coffee or drinks on the deck, hikes and walks, and sending my newly planted kitchen herb garden into a frenzy!

Although my favorite sign of spring is seeing stack after stack of bright red strawberries either in the grocery store or at farmer’s market. Nothing says spring or even summer like a bowl of fresh strawberries or strawberries showing up in your salad, a fresh fruity drink, or dessert!

At their simplest, I’ll put out a bowl of strawberries with a little whipped cream and brown sugar for dipping as a dessert. But there are lots of other delicious things you can put strawberries in. Here are some of our favorites around here!

This new favorite of ours combines grilled chicken and Italian seasoning with fresh strawberries, goat cheese, avocado, spring greens, and my tasty homemade balsamic vinaigrette for a delicious and fresh spring meal.

Frosty, fruity, and delicious! The perfect frozen blender drink to make for a warm spring evening, especially in quarantine when you want to pretend that your back deck is actually the deck of a cruise ship. Rustic Strawberry Shortcake

This rustic strawberry shortcake goes back to its roots. No store-bought sponge cake here. A true shortcake is a lot closer to a biscuit, and it goes great layered with fresh homemade whipped cream and sugary strawberries!

Add a little strawberry puree and garnish to your favorite brunch drink for a little extra sweetness. We made these just in time for Valentine’s day but they’re a favorite of ours to serve year round!
