Simple + Sweet Grilled Peaches + Ice Cream

The summer heat is upon us, friends. And it definitely changes the way we cook and eat and live around the Big Brick House.

For one thing, no one wants to hang out around the stove. We’re all about the grill. Even if it’s raining.

We start craving the simple. Everything is coming in fresh from the farm and off the trees, so why mess it up with a lot of excess stuff?

And ice cream. There should definitely be ice cream.

I snagged a half dozen fabulously near-ripe peaches from the farmer’s market last weekend. They’re the perfect thing to snack on for summer.

And they were just ripe enough for me to make grilled peaches and cream when my sister came to visit.

This family favorite is ridiculously simple. Heat up grill. Slice peaches in half. Brush with a little olive oil and dust with cinnamon and brown sugar. Grill 2-3 minutes each side. Flip and repeat. Serve and enjoy with ice cream and honey.

Too easy. Too tasty. And the best of summer freshness.

Serves 4.

What You’ll Need:

  • 4-6 fresh ripe peaches
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • olive oil for brushing
  • ice cream
  • honey

How to Make Them:

1. Heat up your grill until the flames have dropped and the coals burn red.

2. Cut peaches in half and remove pits. Brush the peach halves lightly with olive oil and sprinkle with brown sugar and cinnamon to taste.

3. Grill 2-3 minutes per side, until peaches pick up grill marks and sugar caramelizes.

4. Serve 1-2 still hot peach halves per bowl with a scoop of vanilla ice cream. Drizzle with honey {optional}.

5. If you imbibe. this pairs very nicely with a sparkling Moscato.

We also make one of these finely chopped and without the honey so that the tiniest human in the house can enjoy it with us. And yes, he eats ice cream.

What’s your favorite summer treat?
