Did you know you could make absolutely delicious bread in your slow-cooker? You can, and it’s pretty awesome. This sweet rosemary bread has fast become a family favorite!
I’ve been experimenting over the years with all kinds of ways to make easy and delicious bread at home. Dutch-oven bread. Bread-maker bread. Plain old baked bread. Some of it is old-fashioned work-your-hands bread but a lot of it is no knead, because I’m looking for delicious no-maintenance recipes.
This homemade no-knead slow cooker bread is probably the lowest maintenance I’ve found yet, though! And it comes out nice and tasty, never dry, gets golden brown with just a few minutes in the broiler, and serves up beautifully with just a little oil and balsamic!
And if it starts getting stale on you, slice it up and crisp it a little in the broiler and you’ve got perfect crostini!
Let this be your option when you want a delicious homemade loaf but you don’t have time to watch the stove. And you don’t want to do anything but mix the dough and forget about it until it’s time to throw it into your slow-cooker.
Here’s what you’ll need to make it:
- 2 tsp active dry yeast
- 3 1/2 cups bread flour
- 2 tbsp honey
- 2 tsp salt
- 1 1/2 cups warm water
- 2 tbsp olive oil
- fresh chopped rosemary
- sea salt to taste
You’ll need just a large mixing bowl, a whisk, a wooden spoon, and, of course, your trusty Crock-Pot or the slow-cooker of your choice
Start by whisking together the yeast, flour, and salt. Add the water and honey and stir it in until the dough is just sticking together.
Roll the dough into a ball. Rub the sides of the bowl with olive oil to keep the dough from sticking, return the dough to the bowl, cover with plastic wrap, and let rise in a warm spot 8-12 hours. We just let ours sit by the oven overnight.
Line your slow-cooker with parchment. Shape the dough into a loaf and put into the lined stoneware. Dampen two paper towels slightly, and drape over the top of the dough.
Cook on high 2 hours, or until the bread’s internal temperature is 190F (otherwise, it’s hard to tell if it’s done!).
Heat your broiler to high, Place the bread on a baking sheet and brush with a little more olive oil. Sprinkle with sea salt, rosemary, or the herbs of your choice, and broil 2-4 minutes, or until you get a nice golden-brown crust.
Serve and enjoy! It’s great for crostini or just dipping in olive oil and balsamic vinegar!

- 1 6-7 quart slow cooker

- Line a large (6+ quart) slow cooker bowl with parchment.
- Shape the dough roughly into a loaf and put into the lined slow cooker. Dampen two paper towel sheets and cover the top of the dough.
- Cook on high 2 hours, or until the bread's internal temp is 190F (otherwise, it's hard to tell it's cooked).
- Heat your broiler on high. Place the bread on a baking sheet and brush with olive oil. Sprinkle with sea salt and rosemary or whatever your favorite crust seasonings are. Broil 2-4 minutes, or until the crust is golden.
- Serve and enjoy!
