Cookies ‘n’ Cream Blondies

Everyone’s favorite sandwich cookie meets sweet golden cookie dough batter for this decadent dessert that’s a definite crowd pleaser and hits all the right craving spots.

So helloooooo baking! It’s been a little bit since I shared a decadent and delicious dessert. Since this one has been rolling around in the back of my mind for a while and last week was trash, it was a terrific excuse for me to crystalize my cookie and Oreo fusion idea into a recipe and to deliver an absolutely awesome cookie bar to your recipe collection. And to my tastebuds.

Okay, last week wasn’t trash. But I was running a conference working group the whole week so I spent my whole week staying focused on presentations and getting none of my actual work done. It’s been really hard to convince people that taking meetings digitally doesn’t automatically mean I can multitask and definitely doesn’t mean I can take two meetings at once.

So we need some therapy here. This is that therapy.

You guys met my Oreo obsession with my Oreo crumble cheesecake bars and my favorite homemade cookies ‘n’ cream milkshakes. Well, let’s just say oops, I did it again, and Oreos have infiltrated these savory blondies for the perfect afternoon snack bar.

Can we have a moment here? These blondies deserve a moment.

The blondies are a riff on my favorite {and yours, too, if the site numbers don’t lie} chocolate chip cookies, only instead of chocolate chips, we’re folding chopped up chocolate sandwich cookies into the batter and baking them into bars with a beautiful crispy golden top and just a little bit gooey insides!

And this is another cookie bar where if you put it in a bowl and zap it for about 20 seconds in the microwave and then add a scoop of ice cream, you have a delicious and perfect summer dessert. And yes, I’m thinking about how to make them into a cookie ice cream sandwich.

You can use a smaller pan or cut larger blondies if you want a larger serving, but I cut mine into about 2-inch squares. That gives you about 20 of them and saves you from sugar overload. Even if it does nothing about the craving to go and have more.

Line a 9×13 pan with parchment paper.;In a medium sized bowl, whisk together the flour, salt, and baking soda. Set aside.;In a large bowl, beat together the melted butter, granulated sugar, and brown sugar until combined. Add the eggs and vanilla and beat well, until the mixture is smooth and creamy, scraping the sides of the bowl as needed.;Slowly add the flour mixture and beat together until just combined.;Fold in about 3/4 of the chopped Oreos (that would be 15 for those of you who are counting) into the batter.;Spread the batter into the parchment-lined pan and top with the remaining Oreos, pressing them down into the batter slightly to make sure they stick.;Bake until the edges are golden, about 22 minutes, or until a knife inserted in the outer 1/3 comes out clean. The center will be gooey, but it will set up while the blondies cool in the pan.;Let cool in the pan for about 10 minutes, then remove to a cooling pan and let cool completely before slicing.;Serve by themselves or heated up just a tad with a big scoop of ice cream![/lt_recipe]

I think the key with any brownie, blondie, or bar recipe in general is to not overcook it. We always want to treat these like pie and wait until the center is cooked. Let it come out a little gooey. That center will set up nicely and you want it to be a little chewy in there!
