I’m back with another tasty cauliflower recipe, this time combining my favorite ranch seasoning flavors with some flavorful cheese and bacon!
If it feels like I’ve been all about the ranch and cauliflower flavors this month, I definitely have. I’ve slacked off big time in the health department in the past year, thanks to travel, a stressful job, and frankly bad stress management. I’m working on getting that under control, and part of that is getting solidly back into a good workout schedule.
And part of that is, well, getting rid of some extra weight so that I can do harder more satisfying workouts. Which means lots of filling and flavorful veggies and salads and lean meats. And when it comes to snacking, that means finding things like this ranch baked cauliflower as opposed to the potato skins I might have otherwise baked (oops!).
These bites have a lot going for them! I season them with ranch seasoning and lemon juice, roast them in an oven for about 30 minutes, and then toss them with bacon bits and gorgonzola cheese. What’s not to love?
This is another one that the carnivorous man creatures who live with me helped me demolish as well. When they’re happy with the flavor and the heartiness, that usually tells me it’s a winner.
Ranch Baked Cauliflower
Equipment
- 1 Baking sheet
- aluminum foil
Ingredients
- 1 head cauliflower cut into 1-2 inch florets
- 1/3 cup olive oil
- 2 tbsp ranch seasoning
- 1 tsp lemon juice
- bacon bits to taste
- gorgonzola cheese to taste
Instructions
- Heat oven to 375F.
- In a small bowl, whisk together the olive oil, ranch seasoning, lemon juice, and bacon bits.
- Place the cauliflower florets in a large bowl. Pour the smaller bowl contents over the florets and toss until the cauliflower is well coated.
- Spread on a foil lined baking sheet.
- Bake at 375F for about 30 minutes, or until the cauliflower edges are golden brown.
- Toss the cauliflower with gorgonzola cheese to your liking. Serve and enjoy!
