Creamy Refried Black Beans

Ingredients
  

  • 1 15-oz can black beans drained and rinsed
  • 4 cloves garlic minced
  • 1/4 ea yellow onion medium, mminced
  • 2 tbsp butter
  • 1 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 cup Mexican cheese blend shredded

Instructions
 

  • In a large skillet over medium heat, melt the butter. Add the onions and garlic and saute until fragrant, about 5 minutes.
  • Add the black beans and seasonings and cook another 5-10 minutes, or until the beans are heated and soft.
  • Using a potato masher or a fork, mash the beans to the desired consistency. Stir and continue to cook.
  • Stir in the broth. Let the mixture reduce to desired consistency (10-15) minutes. Stir in the cheese.
  • Serve and enjoy!
