Lemon Vinaigrette

This lemon vinaigrette is fast becoming my favorite homemade dressing, and it’s ridiculously easy to make. And it goes very well not only with your spring salads, but with grilled fish or chicken as well for a burst of lemony flavor!

As you all can probably tell by now, I’m a big fan of making my own dressings at home – like my rosemary balsamic vinaigrette, my Mandarin orange vinaigrette, my sesame tahini dressing, and more. I can’t remember the last time I actually bought a balsamic vinaigrette since it’s just too easy to throw balsamic and oil and salt and pepper into a cleaned-out salsa jar and shake it up.

But this one is rapidly becoming my favorite. With the zesty bright flavor of lemon bursting through it and some subtle sweetening from honey and the bite of Dijon, there’s so much deliciousness happening in here! You can add it to a simple salad or relatively plain grilled fish or chicken to really jazz up the taste!

Get your ingredients, whisk them up {or throw them in the blender}, put them in a jar, and they’ll keep in the fridge for up to 10 days. Enjoy!
