Herby Roasted New Potatoes

Searching for the perfect delicious and easy side dish you can serve with the simplest and fanciest of main courses? These fantastic herby roasted new potatoes are at the top of our list. They can be dressed up and dressed down as you like, or you can snack on them right from the bowl.

Things aren’t normal right now. I’m not pretending they are. But as I haven’t figured out how to talk about those things, at least not on this platform, I’m going to keep on talking about something that I know and like, especially when times are rough: food.

Food is my love language. If I care about you, I’m probably trying to feed you – which is why right now I’m donating to No Kid Hungry and World Central Kitchen and our local food pantry like crazy, and why I send these recipes off into the aether, hoping that I’m providing someone with an idea about what to make for dinner, what to grow in their garden, and what to do with that box of Panko you found in the back of the pantry and need to use up.

This one is ridiculously simple. You take a bag of new potatoes – you can get a mixed variety bag like we did if you want to dress it up – and cut them up and toss them in sea salt, pepper, olive oil, and some chopped rosemary, throw them in the oven, stir them once, and voila, you’ve got perfect tasty, herby, just-crispy-enough roasted new potatoes, the perfect accompaniment to whatever you’re choosing to serve for dinner.

You can work these potatoes into the main event as well. I like using them in my breakfast hash {recipe coming soon}, or just tossed in a bowl with sausage and roasted veggies. Or you can serve them up by themselves with a drizzle of ketchup or a side of sweet honey garlic aioli to dip them in – and there’s another recipe I need to post soon. Yum!

But no matter how you choose to use them, you’ll get a perfect soft-inside and crispy-outside potato every time you try this. And what’s not to love about that?

I feel for everyone who feels like they don’t have the right words right now, but there are a lot of people talking and I prefer action. So if you can give, give well. We are a long way from fixing all the problems in the world, but we can at least make sure someone gets a meal who might not otherwise.
