Bite Size Frosted Sugar Cookies

Happy day after Thanksgiving!

I’m pretty sure my house is not the only house where we’re having the Christmas debate. As in how soon we can get away with putting up the Christmas decorations, listening to the Christmas music, and basically letting our inner elves take over to get the most out of the season without getting to the point where we OD on Christmas.

That’s happened before. We’ve launched full into the season early only to get fully burnt a week or two before the holiday actually happens. And that’s an instant recipe for Bah Humbug!

So we’re trying to strike a happy medium, embracing everything there is to love about fall, but also bringing in all the koselig touches that we normally associate with Christmas – candles, fireplaces, blankets, stockings, little decorations tucked here and there, and little treats to enjoy by the fire.

Like these.

I make plates of frosted sugar cookies every year around Christmas for friends and family, and I deliberately make them bite-sized. They’re such little sugar bombs that if I made them bigger, they’d be overwhelming.

But small, they’re a perfect little nibble to go alongside your afternoon coffee.

It just so happened, I had leaf-shaped cookie cutters that I bought to cut pie dough for an intricate leaf topping for an apple pie I made ages ago. And they were the perfect size to make beautiful little leaf shaped cookies.

A little bit of whipped up confectioners sugar and water and a dash of food coloring and I had three different colors of frosting to glaze them with.

Seemed the perfect festive touch for an autumn day, where I was trying to make something tasty and cozy but not give too much into the Christmas spirit.

Making Christmas cookies at this point might have crossed the line. Although I will admit, I was listening to my Michael Buble Christmas channel when I was making them.

Bite Sized Frosted Sugar Cookies

Makes 2 Dozen.

What You’ll Need:

  • 2/3 cup butter, softened
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 tbsp milk
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 2 cups powdered sugar
  • water

How to Make Them:

1. In a large bowl, beat the butter with a large wooden spoon (or in a mixing bowl with a paddle attachment) until it is nicely creamed and starting to get fluffy.

2. Add the sugar, baking powder, and salt to the butter, and beat until combined, making sure to scrape the sides of the bowl.

3. Beat in the egg, milk, and vanilla until combined.

4. Beat in the flour a half cup at a time until it is fully combined and the mixture is starting to get fluffy again.

5. On a floured surface, roll half the dough at a time until it is about 1/4 inch thick. Cut the dough into desired shapes using cookie cutters.

6. Place the cookie cut-outs on a parchment lined cookie sheet.

7. Bake in a 375F oven for 8-10 minutes or until the edges are firm and browned. Let cool completely on a rack.

8. Mix together the powdered sugar with the water a tablespoon at a time until the frosting has reached your desired consistency. Add more water for thinner consistency. Add drops of food coloring as required.

9. Frost the cookies and let dry on a rack.

10. Serve and enjoy!
