Bacon Cheddar Popovers

This week is going to be ridiculously busy.

I keep telling myself to kick off my Monday’s with a positive outlook, and the only thing I can be positive about is that I’m going to be exhausted by the end of the week. I’m positive about that.

Last week I made a boomerang run up to Malvern, Pennsylvania to talk about using complexity science models to figure out the best areas for artificial intelligence applications in human resources. This week, I’m heading out to Detroit to talk about finding artificial intelligence talent in the workforce.

I’m enjoying my job and I’m proud of making it here, but sometimes I wish it would just give me a chance to catch my breath.

Of course, I never stop and smell the roses when I do have that chance. I had a chance to stop briefly this weekend {between running a turkey trot with my husband and son and heading to an awesome food and wine festival, which I’ll share more about later}, and I used that chance to create some delicious popovers.

They’ve got bacon. They’ve got cheddar. They’ve got green onion chives. And they’re savory and buttery and if you make them in a muffin pan, they’re just the perfect little pop of savory you need to accompany any dish.

I do want to tweak these in the future so there’s a little more pop and a little less bread, but in the meantime, they’ve made my entire kitchen smell like bacon and butter and everything that’s good in life.


Bacon Cheddar Popovers

Makes 12 popovers. About 125 calories per popover.

What You’ll Need:

  • 1 cup milk
  • 3 large eggs
  • 3 tbsp melted butter
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 3/4 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp green onion chives, chopped
  • 6 pieces bacon, cooked and crumbled

How to Make Them:

1. Preheat your oven to 400F. Butter the cups of a popover pan or muffin pan or large ramekins and dust very lightly with flour.

2. In a large bowl, whisk together the milk, eggs, and butter. Add the flour and salt and whisk again until smooth. Stir in the shredded cheese and the crumbled bacon.

3. Fill the popover cups or muffin cups about halfway full.

4. Bake at 400F for 35-40 minutes or until the popovers are firm and don’t jiggle.

5. Serve immediately and enjoy!

Lots of airy puffy buttery bacony goodness in there, that’s for sure!
