Avocado Toast with Sunny-side Egg

Avocado toast takes a step up with sourdough toast, fresh avocado, seasoning, and a just-a-little-bit-runny egg for a hearty yet healthy breakfast sandwich.

Breakfast is a big deal around my house. Depending on everyone’s schedules, it’s the one meal we’re guaranteed to be able to eat together. But that still doesn’t mean we always want the same things.

Scott bounces between hearty omelets and a bowl of cereal. Marcus will usually demolish a whole banana along with an egg or two, and that’s just the warm up for his second breakfast at daycare. And while I am a big fan of breakfast, I don’t want a whole omelet or anything large, but I do want something more substantial than just cereal and milk. And I want something easy, usually something that I can eat while I’m throwing together breakfast for everyone else and doing dishes and putting together lunches or whatever else I’m doing.

Enter the avocado toast – with a sunny-side egg on top.

Just one of these is usually enough for me, and it’s just the perfect amount of pick-me-up I need to go wrangle my day. And by this time of the week, believe me, I need a pick-me-up.

Toast a piece of sourdough or other rustic bread. Mash or slice half an avocado over it. Season with salt, pepper, and garlic powder. Throw an egg on top. And season again with salt and pepper and sprinkle with some chopped fresh parsley.

Couldn’t be easier. And it’s absolutely delicious.
