Easy Vegetable Fried Rice

I love fried rice, but I used to consider it a guilty pleasure. Because fried, right?

Somehow, it never occurred to me that it was called fried rice because it was stir fried, and if you use the “good” oils, laden with healthy fats, you can still get a hearty and flavorful and fairly nutritious batch of veggie-laden stir-fried rice!

It’s become a favorite around our house, even with our small human. The rice and vegetables are cooked soft enough for him to enjoy, and he’ll shove it in by the handful.

We serve this up alone and sometimes will add some steamed or sauteed shrimp to the grown up plates, or we’ll serve it alongside a fish entree, like our favorite sesame-crusted seared ahi.

It’s easy, it’s hearty but not too heavy, and it’s a meal the whole family can enjoy. Give it a go!

Easy Vegetable Fried Rice

Serves 4-6.

What You’ll Need:

  • 3 tbsp light soy sauce
  • 1 tbsp avocado or sesame oil
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 carrot, diced
  • 3 cups cooked white rice
  • 1 tsp salt
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 3 large eggs, beaten
  • 2 green onions, chopped

How to Make It:

1. Whisk together the light soy sauce, avocado or sesame oil, and olive oil. In a large skillet or wok over medium heat, heat up the oil until it’s shimmering.

2. Add the garlic, onions, and carrots and cook 4-5 minutes, or until the carrots are starting to get tender and the onions opaque.

3. Increase the heat to medium high and add the rice and salt. Cook until the rice is lightly toasted, 3-4 minutes. Add the peas and corn and mix until warmed through, another 3-4 minutes.

4. In a small non-stick skillet over medium-low heat, scramble the eggs.

5. Fold the scrambled eggs and fresh green onions into the rice mixture.

6. Serve immediately. Maybe with a little drizzle of teriyaki sauce.

Note: We also like adding steamed or sauteed shrimp to this dish, and it really helps round out a fish dish that might otherwise leave you a little hungry!

Update: I heard from a reader that for a gluten free version of this, you can make it with gluten-free orzo instead of rice and it comes out pretty awesome! I will have to try it and get back to you!
